Vinification  :  Grapes from vineyards with rocky soils at an altitude of 260 m. The destemmed grapes are crushed and fermented in big conic vats of Slavonian oak, and left to macerate for 15 days. In this period the cap is plunged several times a day. There is no use of temperature control or coltured yeast. After fermentation the must is pressed with the use of a basket press.
Aging              :  30 months in large 3000L Slavonian Oak Barels
Bottled           :  Unfiltered and without the use of preservatives or chemical additives.
